Mom's Classic Macaroni Salad
8 oz elbow noodles (2 cups uncooked)
1/4 cup onion, chopped (I use vidalia or other sweet onion)
1/4 cup celery, finely chopped
1/4 cup green or red pepper, finely chopped (optional-i rarely use it)
1 tablespoon prepared mustard
1 teaspoon sugar
2 tablespoons white vinegar
3/4 cup mayonnaise
salt & pepper to taste
Cook and drain pasta according to package directions; rinse with cold water to cool. In large bowl combine mayonnaise, vinegar, mustard, sugar, salt and pepper. Add cooked pasta, celery, green pepper and onion; toss to coat. Cover; chill to blend flavors.
